Scott Roy
Owner | Hickory & Heart BBQ
Scott brings more than 40 years of business and leadership experience to Hickory & Heart. His career includes executive roles with organizations both large and small, giving him plenty of experience building strong teams and growing businesses.
At Hickory & Heart, Scott focuses on the business behind the barbecue, helping set the restaurant up for what’s next while keeping people at the center of it.
Chef Michael Quetti
Owner | Hickory & Heart BBQ
A South Carolina native and professionally trained chef, Michael Quetti has spent his career cooking in some of the Southeast's most respected kitchens, including The Ritz-Carlton Atlanta, Emeril's in Charlotte, The Cliffs Country Club, and Tupelo Honey Southern Kitchen & Bar.
With roots in traditional Southern cooking and a passion for the bold flavors of Louisiana and the Carolina Lowcountry, Michael brings a chef-driven approach to Hickory & Heart BBQ.
From the smoker to the menu, his focus is on doing the little things right, respecting the traditions of great barbecue, and putting out food he's proud to serve.
